Selection
A selected breed of female pigs and a natural feeding in the best of our environment gives us the best hams.
Three factors determine the tradicional quality of our hams:
Additive-free products
The drying process takes 18 months, the perfect amount of time to obtain a sweet ham. First, hams are put into salt for a short period of time without adding colourings, preservatives or additives.. After that, they are taken into the natural drying rooms.
Tradition
Finally, hams are put in cellars where tha artisan plays with the climatology to control the drying process. There, there is no hurry to obtain the best results.
